The act of carefully fermenting and distilling sugarcane extracts and tropical fruits is predominant in the Western Ghats. Reawakening the inspiration behind the 400-year-old history of toddy making in Kerala. Inspired by ‘Hortus Malabaricus’ (Garden of Malabar), a 17th-century botanical treatise covering the Western Ghats region in Southern India. Malabari refers to Indians from the Malabar region (southwest coast) of Kerala, India. The Malayalam word for unaged distilled spirit. Tucked between the Western Ghats and the Arabian Sea, the Malabari region is the land of monsoon and the pre-colonial spice capital of the world.
